My name is Dillon Ikeda. My wife and I own and operate Chonghi Pizza. We are into making “sort of” Neapolitan pizza and are influenced by the mixed flavors we grew up with in Hawai’i along with the amazing produce available from local Pacific Northwest farms.
Never thought I’d be making pizza. My initial food venture was going to be chopped cheese sandwiches, however due to a minor health concern I had to change my diet. Eventually, I would allow myself one comfort food meal a week and it was pizza. We started going to a new pizza spot every week in Portland and became obsessed.
Then came the books, countless videos, attempts to stage, gathering equipment and making pizza at home regularly. The more pizza I made, the more I realized how much I love the craft. After about a year, I woke up one day and decided that this is what I want to do. I quit my job and just tried to figure out how to pursue my passion.
We’re very lucky and grateful to be where we are now. There were so many challenges and obstacles but with the help of my family and friends it became a reality. Pizza became the canvas that I could forever paint on and it never ends.
